Courgette & Apple Cookies

  1. 1 grated apple
  2. 1/2 grated courgette
  3. 2 tbsp melted coconut oil
  4. 2 ripe smashed bananas
  5. 2 tbsp maple syrup
  6. 2 cups gluten free oats
  7. 1/4 cup walnuts crushed
  8. 1 tsp baking powder
  9. 1/2 tsp ground ginger
  10. 1 tsp all spice
  11. 1 tsp cinnamon
  12. 1 tbsp almond nut butter
  13. 1 tsp vanilla essense
  1. Add all the ingredients to a large bowl and stir thoroughly to combine.
  2. Line a baking tray with baking paper then scoop out heaped tbsp.'s of the mix and place on the tray. Squish them down to flatten a little.
  3. Bake on a medium heat for 20 minutes.
  4. Allow to cool a little before scoffing.
