Roast sweet potato with roast chickpeas & herby tahini dressing

Spicy roast chickpeas
  1. 1 can organic chickpeas
  2. 2 sweet potatoes - chopped
  3. 1 tbsp olive oil
  4. 1/2 tsp chilli flakes
  5. 1/2 tsp ground coriander
  6. 1/2 turmeric
  7. Sea salt
  8. Black pepper
Tahini dressing
  1. Handful Coriander
  2. Handful Mint
  3. 1 tbsp tahini
  4. 1 garlic clove
  5. Juice 1 lemon
  6. Sea Salt
  7. Black pepper
  8. Water
Instructions
  1. Add the chickpeas, sweet potatoes, spices and olive oil to a baking tray and stir to coat the chickpeas.
  2. Pop in the oven on a medium heat for 20-25 minutes until the chickpeas are slightly crispy. Remove from the oven and set aside.
  3. Add all the tahini dressing ingredients to a mini chopper or pestle and mortar and blitz until you get a paste. Add more water to get the deserved consistency.
  4. Cover the chickpeas with the dressing and sprinkle over 3tbsp hazlenuts.
