Coconut curry

Method


  1. Put the oil in a large frying pan or wok on a low heat.
  2. While the oil is heating up peel the ginger and garlic, then grate them straight into the wok.
  3. Add the chilli flakes, turmeric and dried coriander to the wok and stir the ingredients up.
  4. Give the Grown With Love British Crown Jewel Asparagus a wash, and then chop it into 2 centimetre chunks, before adding them to the wok.
  5. Add the Grown With Love Courgette Spaghetti and the coconut milk to the wok and give the ingredients another good stir.
  6. Leave the ingredients to simmer for a couple of minutes until the asparagus is tender and the courgette spaghetti is cooked through.

  • 1 tbsp olive or coconut oil
  • 2cm cube of fresh ginger
  • 2 cloves of garlic
  • ½ tsp chilli flakes
  • ½ tsp turmeric
  • 1 tbsp dried coriander
  • 100g Grown With Love British Crown Jewel Asparagus
  • 250g Grown With Love Courgette Spaghetti
  • 200ml of tinned coconut milk
