Hearty kale salad

  1. Wash the kale, remove the stalks and chop into chunks
  2. Place the kale in a bowl, drizzle the remaining ingredients over and massage into the leaves until they soften and change colour to a more vivid green
  3. Grate or spiralise the carrot and sweet potato onto the salad
  4. Chop the other topping ingredients to your liking


For the base salad
  • 200g kale
  • 2tbsp extra virgin olive oil
  • 2tbsp lemon juice
  • 2tbsp orange juice
  • 1/4 tsp Himalayan salt
  • For the topping
    • 1 large carrot, peeled
    • 1 sweet potato, peeled
    • 1 super-ripe avocado
    • 70g pitted olives
    • 4 sundried tomato halves
