Sweetcorn baked with crispy bacon and melted cheddar cheese

  • Serves: 4


  1. Put the sweetcorn cobs in an ovenproof dish along with 2 tbsp. of water, and place in a preheated oven (200°c, fan 180°c, gas mark 6) for 10 to 15 minutes.
  2. Whilst the sweetcorn is cooking, heat the olive oil in a shallow frying pan, add the finely-diced bacon, and fry until a light golden brown. Remove the bacon from frying pan, draining any excess oil.
  3. Remove the dish with the cobs in from the oven, sprinkle the grated cheese evenly over the cobs, and top with the cooked bacon. Place back in the oven for 5 to 10 minutes until the cheese has melted.
  4. Remove the cobs from the oven. Serve with a sprinkling of chopped parsley.


  • 4 fresh sweetcorn cobs
  • 4 rashers of extra lean smoked bacon, finely diced
  • 100g of grated mature cheddar cheese
  • 1 tbsp. of olive oil
  • Finely chopped fresh parsley
