Sweetcorn baked with crispy bacon and melted cheddar cheese
- Put the sweetcorn cobs in an ovenproof dish along with 2 tbsp. of water, and place in a preheated oven (200°c, fan 180°c, gas mark 6) for 10 to 15 minutes.
- Whilst the sweetcorn is cooking, heat the olive oil in a shallow frying pan, add the finely-diced bacon, and fry until a light golden brown. Remove the bacon from frying pan, draining any excess oil.
- Remove the dish with the cobs in from the oven, sprinkle the grated cheese evenly over the cobs, and top with the cooked bacon. Place back in the oven for 5 to 10 minutes until the cheese has melted.
- Remove the cobs from the oven. Serve with a sprinkling of chopped parsley.
